Teriyaki Pineapple Salmon
Ingredients
- 2 tbsp vegetable oil
- 1/2 tsp salt
- 1/2 tsp freshly ground pepper
- 2 salmon fillets (skin on)
- 1/3 cup teriyaki sauce
- 1/2 tsp ginger powder
- 1/4 cup pineapple juice
- Freshly cut pineapple
Steps
- Heat vegetable oil in a pan on medium high heat. Sprinkle salt and pepper on both sides of salmon fillets.
- Once the pan is hot, place the fillets in the pan, skin side down and sear for 5 minutes until the skin is crispy. Turn the fillets and cook for another 5-8 minutes until the fish is fully cooked.
- Mix teriyaki sauce, ginger and pineapple juice in a small sauce pan and bring to a simmer. Simmer for 3-4 minutes until slighly thickened and reduced.
- Pour the sauce on the salmon fillets and cook for another 2 minutes.
- Add fresh pineapple and caramelize.
- Serve with white race and steamed broccoli.
*If you would rather cook using the oven (less mess), preheat the oven to 375 degrees F and line a baking sheet with aluminum foil. Coat with nonstick spray, place the salmon pieces on it and set aside. Make the sauce according to the recipe instructions and brush it over the salmon pieces. Bake in oven for 25 minutes until it's cooked and flaky.
